About H2O - The Unsung Hero of Every Roast

Water makes up over 98% of your coffee, yet it’s often overlooked as a key ingredient. The quality, temperature, and mineral content of your water can dramatically affect the flavor, aroma, and clarity of your cup. Hard water, rich in calcium and magnesium, may enhance certain flavors but can also lead to bitterness and scale buildup in your equipment. Soft or distilled water can result in flat or under-extracted coffee due to its lack of essential minerals. The sweet spot? Clean, filtered water with a balanced mineral profile—ideally around 150 ppm total dissolved solids (TDS).

Temperature matters too. Brewing with water between 195°F and 205°F (90°C to 96°C) helps extract the optimal range of coffee compounds. Too hot, and you’ll over-extract bitter notes. Too cool, and your brew will be weak and sour.
